Hi Guys,
Which software will allow me to lay a breadcrumb trail while off road so i can map my own tracks? Handy to map out off road places when there are no maps of it
I have seen it on the PC versions of software but not on PDA versions, specifically windows mobile 5.0 compatible is what i want.

OziExplorer CE is one that comes to mind.

OziExplorer CE is one that comes to mind.
Checked it today and it can't only the PC version does. Co-Pilot doesn't either and neither does Destinator.

errrrrrrrr, how do I say this nicely
You are mistaken  I run OziExplorer CE on my PDA and I can assure you, I track where I have been, and I can save the files and and overlay them on my maps.

So you can do it; just not on the fly?
I would like it for when i go to a park i can map out everything and know where i have been put point of interest (toilets, showers, kiosk) just so i always know exactly where i am.

Yes - you set an option in OziExporler CE to record the "Track", you can record every metre if you want (and have the memory available). My PDA recorded every 250 metres I traveled over 15,000km, I simply saved the "Track" from memory to file at the end of each day. If I had a screen capture program I would show you the screen image...Once the track is stored, it is a simple ".plt" (from memory) file, and used in OziExplorer or exported to many other formats if you prefer, including Microsoft Excel if your a masochist.
You can then reload the saved track, convert it to a route etc:
As for toilets etc, you can also save (and name) as many waypoints as you want or have storage for. Given I have seen 2Gb SD Cards for less than $60, that is a shite load of track and waypoints. My 2Mb SD Card has all the maps of Victoria loaded onto it and there is still plenty of room for tracks and routes, waypionts and the raw executables in case I have to rebuild the unit when out and about...
Only problem I have observed is the file records your position and elevation well, but the other data it records is unreliable. For example, the program records the speed of the unit at given intervals but the numbers were often ambitious (my Prado is sweet, but 382.5km  ).
